The Old Gringo's Frijoles Negros



1 (15 oz) cans black beans
1 (16 oz) package frozen sweet corn
2 tsp salt
2 tsp turbinado sugar (has a slight molasses flavor)
1 tsp lime juice
2 tsp dry mustard
2 tsp chili powder
1 tsp ground cumin
1 minced medium sized sweet onion
3 minced garlic cloves
2 tsp chopped fresh cilantro

Place all of the ingredients in a heavy sauce pan and mix well.
Simmer for 25-30 minutes
Serve and eat.

All of the spices can be adjusted to suit various tastes.

As a side dish, serve with diced tomatoes and cilantro leaves atop
mélange.

For breakfast, serve with melted cheddar cheese atop the mélange
accompanied by scrambled eggs.

For those with extra time, the onion can be caramelized before adding
the other ingredients. It's really good.
