Kristi’s Last Chance Gulch Spinach & Cranberry Salad


1 tblsp butter
¾ cup blanched, silvered almonds
1 lb spinach, washed and torn into pieces
1 cup dried cranberries
2 tblsps toasted sesame seeds
1 tblsp poppy seeds
½ cup sugar
2 tsps minced onion
¼ cup white vinegar
¼ cup cider vinegar
½ cup vegetable oil

In a medium sauce pan melt butter and add almonds, stirring constantly until lightly coated. Remove from heat and cool. In a large bowl toss spinach with almond and cranberries. In a medium bowl whisk together sesame seeds, poppy seeds, sugar, onion, vinegars, and oil. Toss with spinach mixture immediately before serving. Makes a beautiful presentation when served in a glass bowl.

An avid gardener and collector of stray cats, she enjoys riding with her husband Bruce on their Harley-Davidson. She is the niece of the Old Fart’s fellow Master Gardener and composting buddy, Debbie Grosshauser, and the granddaughter of Margaret Epperson, another avid gardener and champion weed picker.
