HEARTY AND HEART HEALTHY GARLIC AND DILL SALMON

2 salmon fillets
1 head of garlic
1 oz fresh dill weed
½ cup olive oil
1 tsp salt and pepper to taste

(1) mince garlic, chop dill leaves, mix thoroughly in olive oil, making a paste
(2) lay fish fillets skin side down in baking dish.
(3) rub paste over fish and refrigerate for two hours
(4) preheat oven to 375° F
(5) bake in preheated oven for 15 minutes. Don’t overcook.

Seldom in this life can a person be a glutton and abstemious at the same time. Dill weed and garlic are notoriously healthy herbs as is salmon a healthy fish. After eating a dinner of garlic, dill, and salmon, one has abstained from heart coagulating foods while enjoying the finest of dining.

See http://highcountrygardener.blogspot.com for article on dill.
