ANTI-CHOLESTEROL OLIVE OIL, SAGE, & LEMON BREAST OF

CHICKEN


2 fillets of chicken breasts
6-8 fresh sage leaves
1 tbsp butter
1 tbsp lemon juice
3 tbsp sauvignon blanc
Salt and freshly ground pepper

(1) pat dry chicken fillets of breast, season with salt and pepper
(2) in a medium sized skillet heat butter along with sage leaves
(3) when butter begins to bubble, raise heat to medium high and add chicken breasts
(4) brown on both sides 1½ to 2 minutes each side. Remove to plate
(5) add lemon juice to pan, scrape drippings, add wine & teaspoon of water
(6) below a simmer, heat until slightly thickened
(7) return chicken to pan and heat 1 to 2 minutes until thoroughly heated
(8) serve

With the exception of the pat of butter, this is a heart healthy dinner and will help with the cholesterol fight while tasting great. It is one of the few occasions in life when one can be gluttonous and virtuous simultaneously. Also, it is said that sage helps with digestion which adds the third dimension of usefulness.
